Sweet Potato Pone - cooking recipe

Ingredients
    4 medium sweet potatoes (unpeeled), washed and grated
    1/2 c. softened butter
    4 eggs, beaten
    1 c. brown sugar
    1 c. white sugar
    1 c. chopped pecans
    1 tsp. vanilla
Preparation
    Preheat oven to 350\u00b0.
    Blend butter, sugars, nuts and vanilla into grated potatoes; fold in beaten eggs.
    Pour into well-greased 11 x 7 x 2-inch baking dish.
    Bake about 1 hour at 350\u00b0.
    May be served warm, or cooled and served topped with whipped cream. Yields 8 servings.
