Florida Orange Melts - cooking recipe
Ingredients

1 2/3 c. coarsely broken vanilla wafers
1 1/3 c. chopped pecans
2/3 c. powdered sugar
1/4 tsp. finely grated orange zest
3 Tbsp. thawed orange juice concentrate
2 Tbsp. orange liqueur
2 tsp. light corn syrup
1 c. shredded coconut
Preparation

In a food processor, process the wafers with 1 cup of the pecans until finely ground.
Add together the powdered sugar and orange zest and mix well until evenly incorporated.
Add the orange juice concentrate, orange liqueur and corn syrup and mix until blended.
Finely chop the remaining pecans and spread them in a shallow bowl.
Spread coconut in a shallow bowl.
Form the mixture into 1-inch balls.
Roll in either the pecans or the coconut to coat.
Let cookies mellow for at least 4 hours before eating.
Makes 2 dozen.
