Smoked Sausage, Vegetables And Mexican Rice - cooking recipe
Ingredients

1 Tbsp. vegetable oil
1 c. uncooked long grain rice
1 clove garlic, finely chopped
1 medium onion, chopped
1/4 c. tomato sauce
1 1/2 c. water
1/2 tsp. cumin
1/2 tsp. salt
1/4 tsp. pepper
1 lb. smoked sausage, sliced
3/4 c. carrots, sliced
1 medium zucchini, sliced lengthwise and cut in pieces
Preparation

Heat oil in a large, heavy skillet.
Add rice; brown until rice is golden brown.
Add garlic and onion; saute 1 to 2 minutes. Add tomato sauce, water, cumin, salt and pepper.
Add sausage and carrots.
Bring to a boil, reduce heat, cover and simmer for 20 minutes.
Add zucchini.
Cover; simmer another 10 minutes, or until the liquid is evaporated and the rice is soft.
Makes 6 servings.
