Minestrone - cooking recipe
Ingredients

1 medium onion, chopped
1 stalk celery, chopped
2 medium carrots, chopped
1 c. fresh or frozen green beans
1 medium zucchini, chopped
1 (10 oz.) pkg. frozen chopped spinach
1 (28 oz.) can tomatoes
1/2 c. uncooked macaroni (try whole wheat)
1 (15 oz.) can navy beans with juice
1/4 tsp. basil
1/4 tsp. oregano
1/4 tsp. cayenne pepper
water as needed
2 c. stock
1 medium potato, cut into eighths
1/2 c. onions, sliced
1/2 c. celery, sliced
1/2 tsp. fresh ground black pepper
1 Tbsp. dried parsley
Preparation

This is a fast soup, that is, it takes 10 minutes to get everything into the pot.
It's the prototype for any quick soup. Just start with stock and add any vegetables, potatoes, rice, lentils or other grains or legumes and cook for 1 hour.
