Oven Fried Okra - cooking recipe

Ingredients
    1 lb. fresh okra
    1/4 c. nonfat buttermilk
    1/3 c. all-purpose flour
    1/2 tsp. salt
    1/4 c. egg substitute
    2/3 c. corn meal
    1 tsp. baking powder
    1 Tbsp. canola oil
Preparation
    Wash okra and drain.
    Remove tips and stem ends.
    Cut okra crosswise in 1/2-inch slices.
    Combine egg substitute and buttermilk.
    Stir in okra and let stand for 10 minutes.
    Combine corn meal and next 2 ingredients in a zip top plastic bag.
    Drain okra, small portion at a time.
    Spray baking sheet with cooking spray.
    Place okra on baking sheet and sprinkle canola oil over the okra.
    Bake at 375\u00b0 to 400\u00b0 until brown.
