Fried Green Tomatoes - cooking recipe

Ingredients
    3 to 4 medium size green tomatoes
    1 c. flour
    1/4 c. bacon fat
    bacon strips to garnish
    1/4 c. oil
    1/4 c. brown sugar
    salt and pepper to taste
Preparation
    Cut off the stem ends and slice the tomatoes in thick slices. Press each slice in the flour, coating it heavily.
    In a frying pan, heat the bacon fat and oil.
    Add the tomatoes.
    While the tomatoes are browning on one side, sprinkle the brown sugar liberally on the other side.
    Turn over carefully and cook as the brown sugar caramelizes and blends with the flour.
    When just browned on both sides, remove to a hot platter. Sprinkle with salt and pepper to taste and serve.
    Bacon strips make a nice garnish for this dish.
