Spiced Melon Rind - cooking recipe

Ingredients
    3 lb. white portion watermelon, cubed
    5 c. sugar
    2 c. cider vinegar
    1 c. cold water
    1 Tbsp. whole cloves
    1 Tbsp. allspice
    1 Tbsp. cinnamon
    1 lemon, sliced
    2 Tbsp. salt (per qt. water)
Preparation
    Let watermelon rind stand in salted water to cover overnight. Next day, drain and cover with fresh cold water.
    Cook until tender, about 10 minutes, then drain.
