Skillet Cabbage(Contains 230 Calories) - cooking recipe

Ingredients
    1 small head cabbage (1 1/4 lb.)
    4 slices bacon, cut into 1 inch strips
    2 medium size carrots, peeled and coarsely shredded
    1 medium size yellow onion, thinly sliced
    2 stalks celery, thinly sliced (optional)
    2 medium size tomatoes, chopped
    1 Tbsp. sugar
    1/2 tsp. salt
    1/8 tsp. black pepper
Preparation
    Quarter the cabbage; trim off
    and
    discard
    the core at the point of each quarter, then
    cut the quarters into 1/8 inch thick slices; set aside.
    Cook the
    bacon
    in
    a
    12 to 14-inch skillet over moderately high heat for 5 minutes or until crisp. Remove from
    skillet
    and drain
    on
    paper
    towels.
    To
    bacon drippings in the skillet add
    the
    cabbage,
    carrots, onion and the celery if used.
    Cook uncovered, stirring occasionally over moderate heat for 5 to 7
    minutes
    or
    until the vegetables are crisp-tender. Mix tomatoes; remove
    the
    skillet from the heat and season with sugar, salt and pepper.
    Top with bacon.
