Fugace (Potato Bread) - cooking recipe

Ingredients
    2 1/2 lb. flour
    1 pkg. dry yeast (or 1 Tbsp. yeast)
    1 tsp. salt
    1/3 c. oil (plus oil in a saucer for kneading)
    3 medium-sized cooked potatoes
Preparation
    Mix mashed potatoes and oil together.
    Add yeast (mixed with warm water).
    Add water as needed to make a nice soft dough.
    Knead with knuckles dipped in oil.
    Cover and let rise about one hour. Put dough in greased pan and let rise again about one hour.
    Make finger holes on top of bread and spread oil over the top just to coat.
    Place in a hot (350\u00b0) oven.
    Cooks in one hour.
    Bread must be well browned.
