Potato Candy - cooking recipe

Ingredients
    1 potato (medium size)
    1 Tbsp. vanilla
    confectioners sugar
Preparation
    Cook potato until it can be mashed fine.
    Add vanilla until stiff enough to roll on board.
    Sprinkle board with confectioners sugar and roll to thickness of pie dough.
    Spread with peanut butter; roll up and cut in half-inch slices.
    Place on greased plate to harden.
