Baked Eggplant Slices - cooking recipe

Ingredients
    1 c. mayonnaise
    1/4 c. milk
    1 Tbsp. lemon juice
    1/4 tsp. salt
    1 medium peeled eggplant, cut in 1/2-inch slices (1 lb.)
    3 c. finely crushed cheese-flavored crackers
Preparation
    In a bowl, combine mayonnaise, milk, lemon juice and salt. Season eggplant slices with additional salt; dip into mayonnaise mixture, then coat with crumbs.
    Place eggplant slices on a 15 x 10 x 1-inch baking pan.
    Bake in 350\u00b0 oven for 25 or 30 minutes or until slices are crisp and hot.
    Makes 6 servings.
