Pina Colada Party Cake - cooking recipe
Ingredients

1 c. coconut *
1 pkg. white cake mix
1/2 c. water
1/2 c. pineapple juice
1/3 c. oil
1/4 c. light rum
4 egg whites
1/2 c. sugar
1/2 c. pineapple juice
Pillsbury ready to spread frosting (I use white chocolate)
1/2 tsp. rum extract
1 Tbsp. rum
Preparation

In saucepan, bring to a boil the sugar and pineapple juice. Using a fork, prick cake at 1/2-inch intervals and pour hot syrup over cake.
Let cake cool, and frost with frosting (add rum extract and rum).
Spread over cake and sprinkle with 1/2 cup toasted coconut.
Refrigerate.
Serve chilled.
