Hearty Wild Rice Soup - cooking recipe

Ingredients
    2/3 c. uncooked wild rice
    2 Tbsp. butter
    1 Tbsp. minced onion
    1/4 c. flour
    1 qt. chicken broth
    1/2 tsp. salt
    1/3 c. shredded carrots
    1/3 c. diced celery
    1/3 c. sliced fresh mushrooms
    1 c. half and half cream
    2 Tbsp. sherry
    fresh parsley
Preparation
    Rinse wild rice and soak in cold water 1 hour. Drain.
    Cover with boiling water and cook over low heat 40 minutes.
    Melt butter in 4-quart pan and saute onion. Blend in flour.
    Gradually add the broth and cook, stirring constantly, until slightly thickened. Stir in rice, salt, carrots, celery and mushrooms. Simmer 5 minutes. Add cream and sherry.
    Heat to serve. Garnish with parsley.
    Yields 12 cups.
