Spinach Quiche - cooking recipe

Ingredients
    1 (10 oz.) pkg. frozen chopped spinach
    1/2 lb. Swiss cheese, diced
    2 Tbsp. all-purpose flour
    3 eggs, beaten
    1 c. skim milk
    1/2 tsp. salt
    1/8 tsp. pepper
    dash of ground nutmeg
    vegetable cooking spray
Preparation
    Cook spinach according to package directions, omitting salt. Place on paper towels.
    Squeeze until barely moist.
    Set aside. Combine cheese and flour; set aside.
    Combine eggs, milk, salt, pepper and nutmeg.
    Stir in spinach and cheese until well blended. Pour mixture into a 9-inch deep dish pie plate, coated with cooking spray.
    Bake at 350\u00b0 for 55 to 60 minutes.
    Let set 5 to 10 minutes before serving.
    Yields 8 servings (approximately 165 calories per serving).
