Brandied Yams - cooking recipe
Ingredients

6 large sweet potatoes
3 tsp. cornstarch
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 c. sugar
1 c. water
1 Tbsp. lemon juice
1/3 c. brandy
Preparation

Cook unpared sweet potatoes in boiling, salted water for 25 minutes or until tender.
Drain and cool.
In saucepan, mix cornstarch, cinnamon, salt and sugar.
Stir in water.
Cook over low heat until sauce is clear.
Stir in lemon juice and brandy. Peel potatoes and slice crosswise 1/4 to 1/2-inch thick.
Put slices into a buttered 9-inch square baking dish.
Pour sauce over all.
Bake at 375\u00b0 for 30 minutes, basting occasionally.
Serves 8.
