Risi Besi - cooking recipe

Ingredients
    2 Tbsp. olive oil
    4 Tbsp. butter
    1/2 c. chopped onion
    1 c. uncooked rice
    2 Tbsp. dry sherry
    2 c. frozen peas
    1 (15 1/2 oz.) can chicken broth
    1 1/4 tsp. salt (optional)
    1/4 tsp. white pepper
    1/4 c. grated Parmesan cheese
Preparation
    Heat oil and 2 tablespoons butter in large saucepan; saute onion for 5 minutes. Mix in rice and saute until clear. Add sherry and cook over low heat for 1 minute. Add broth, peas, salt and pepper. Cover and cook 15 minutes or until rice is tender. Remove from heat. Add cheese and remaining butter.
