Comfort Soup - cooking recipe

Ingredients
    2 tsp. olive oil
    1 c. sliced mushrooms
    8 to 12 oz. cooked linguine
    4 c. boiling vegetable stock
    4 oz. firm tofu, cut into cubes
    6 c. coarsely chopped spinach
    2 Tbsp. soy sauce
    6 sliced scallions
Preparation
    Heat oil in soup pot.
    Add mushrooms and stir-fry for two minutes.
    Add noodles and stir-fry for one minute to heat through. Add boiling vegetable stock, tofu, spinach and scallions.
    Bring to a boil.
    Simmer for one-half hour.
    Serve with whole grain bread and tossed salad.
