Chowder(Quantity) - cooking recipe
Ingredients

3 medium onions, chopped or sliced thin
1/4 lb. salt pork, cut into 1/4-inch pieces
1 (No. 10) can creamed corn or 1/2 gal. chopped clams or 3 lb. haddock or similar white fish
4 Tbsp. flour
2 Tbsp. butter
salt and pepper to taste
3 or 4 lb. potatoes, cut in cubes
1 1/2 to 2 gal. milk
Preparation

In a large frying pan, cook salt pork until well done.
Add onion and saute until golden.
While cooking this, cook potatoes in a 12-quart kettle.
Drain.
Add milk.
Stir flour into onion mixture.
When milk and potatoes are warm, thoroughly stir in thickening.
Immediately add corn or clams.
If making fish chowder, precook until fish breaks apart; then add.
Continue cooking until piping hot.
