Sweet Potato Souffle - cooking recipe
Ingredients

2 c. mashed sweet potatoes (warm)
1/4 c. brown sugar
2 Tbsp. butter
2 eggs
1/4 tsp. salt
1/2 c. cream or milk
1 small bag marshmallows
Preparation

In bowl, make a batter of the warm mashed sweet potatoes by adding well-beaten egg yolks, salt, sugar, butter and enough cream or milk to give mixture the consistency of cake batter.
In bowl, beat egg whites until stiff.
Fold them into batter.
Pour into a buttered baking dish.
Top with marshmallows.
Bake in 350\u00b0 oven until marshmallows are melted and nicely browned.
