Modified Twice Baked Potatoes - cooking recipe

Ingredients
    12 large potatoes, baked
    1 1/2 to 2 c. skimmed milk, scalded
    1/2 to 2/3 c. margarine
    1/2 to 3/4 tsp. pepper
    1 Tbsp. grated onion
    1 egg white
    1 (2 oz.) jar pimento, drained and chopped
    1 c. grated sharp Cheddar cheese (light or low-fat variety)
Preparation
    Note:
    Eliminate or use scant sprinkling of low sodium salt.
