Eggplant Pattie - cooking recipe

Ingredients
    1 eggplant
    1 1/4 c. Ritz cracker crumbs
    1 1/4 c. grated cheese
    2 eggs, beaten
    salt and pepper to taste
    1 clove garlic, minced
    2 tsp. dried parsley
Preparation
    Peel and dice eggplant and cook in a little water until very tender.
    Drain well in a strainer, add other ingredients and mix well.
    Put 2 tablespoons oil in hot skillet and drop by spoonfuls. Brown one side, turn to brown other side.
