Pork Tenderloin With Tarragon Sauce - cooking recipe

Ingredients
    1 1/4 lb. pork tenderloin
    1/4 tsp. each: salt and pepper
    1 Tbsp. Dijon mustard
    1 Tbsp. margarine
    1/2 tsp. tarragon leaves (dry)
    1/3 c. beef broth
    1/2 c. whipping cream
Preparation
    Cut meat into 1-inch slices.
    Place meat between sheets of wax paper.
    Flatten each piece.
    Salt and pepper slices and brush with mustard on both sides.
    Melt margarine in skillet and brown the meat on medium heat until pink color is gone, about 5 minutes per side.
    Remove from skillet and keep warm.
    Sprinkle tarragon in skillet; add broth and boil about 2 minutes.
    Add cream.
    Boil and whisk until thickened.
    Salt and pepper to taste.
    Pour sauce over meat or serve separately.
    Sauce is good over rice with the meat slices.
