Black Beans And Rice Salad - cooking recipe

Ingredients
    2 cans black beans, rinsed and drained (15 oz.)
    1 c. cold, cooked rice
    1 c. chopped tomato
    1/4 c. chopped celery
    1/4 c. sliced green onions
    1/4 c. fresh, chopped cilantro (optional)
    1/4 c. lime juice
    1/4 c. olive oil
    1/2 tsp. salt
    1/8 tsp. pepper
    1/8 tsp. hot pepper sauce (Tabasco)
    2 garlic cloves, minced
Preparation
    In a large bowl, combine beans and rice.
    Mix well.
    Fold tomato mixture into beans and rice.
    Cover and refrigerate 1 hour to blend flavors.
    Makes 10 (1/2 cup) servings.
    (Pace picante sauce can be added for extra zip.)
