Eggplant Fritters - cooking recipe

Ingredients
    2 qt. uncooked eggplant
    2 eggs
    1/4 lb. saltine crackers
Preparation
    Peel and cook eggplant; drain and let cool.
    Mix eggs and crackers to thick consistency.
    Pat into desired cakes and fry in Crisco or Wesson oil for 5 minutes.
    Salt and pepper to taste.
