Ingredients

1/2 c. brown sugar
6 Tbsp. cornstarch
4 c. skim milk
2 Tbsp. margarine
1 1/2 tsp. butterscotch extract
Preparation

In a medium saucepan, combine sugar and cornstarch; mix well. Add 1/2 cup of milk and stir until sugar and cornstarch are dissolved.
Stir in remaining milk.
Bring to a boil over medium heat, stirring constantly.
Boil 1 minute.
Remove from heat and stir in margarine and butterscotch extract.
Chill about 3 hours, then ready to serve.
Serves 8.
