Bean Sprout Salad - cooking recipe

Ingredients
    2 lb. fresh bean sprouts
    1 kettle boiling water
    3 Tbsp. finely chopped scallions
    3 Tbsp. soy sauce
    2 Tbsp. sesame oil
    1 Tbsp. sugar
    1 Tbsp. vinegar
    1 Tbsp. toasted sesame seed
    chopped red pepper, fresh or dried to taste
Preparation
    Rinse bean sprouts, removing any green shells that may be left.
    Place in large colander and pour boiling water over sprouts to blanch.
    Combine remaining ingredients and mix with sprouts. Serve warm or cold.
