Baked Cheese Grits(Makes 18 To 24 Servings) - cooking recipe

Ingredients
    18 c. water
    3 Tbsp. salt
    4 1/2 c. uncooked, regular grits
    1 1/2 c. butter or margarine
    12 c. shredded, medium-sharp Cheddar cheese, divided
    18 eggs, beaten
Preparation
    Combine water and salt; bring to a boil.
    Stir in grits; cook until done, following package directions.
    Remove from heat.
    Add butter and 11 1/4 cups cheese; stir until completely melted.
    Add a small amount of hot grits to eggs, stirring well.
    Stir egg mixture into remaining grits.
    Pour grits into a lightly greased steam table pan; sprinkle with remaining 3/4 cup cheese.
    Bake at 350\u00b0 for 1 hour and 15 minutes.
