Eggplant Shrimp Casserole - cooking recipe

Ingredients
    2 large eggplants, peeled
    1/2 lb. shrimp, cleaned
    4 cloves garlic, minced
    1 medium onion
    1 Tbsp. corn oil
    1 ripe tomato
    1 c. bread crumbs
    1 c. grated mild Cheddar cheese
    salt and pepper to taste
Preparation
    Preboil
    eggplant
    until
    tender;
    drain.
    Saute onion, eggplant, garlic and shrimp in the corn oil.
    Season with salt and pepper to taste.
    Mix in 1/2 cup of bread crumbs.
    Pour in greased casserole
    dish.
    Top
    with
    sliced
    tomato, remaining bread crumbs and cheese.\tBake at 350\u00b0 for 30 minutes.
