Low-Fat Impossible Pie - cooking recipe

Ingredients
    1/2 c. pancake mix (lite)
    1/2 c. sugar
    1 carton liquid egg (substitute)
    2 c. skim milk
    3 oz. frozen coconut
    1 tsp. vanilla
    2 tsp. reduced calorie margarine
Preparation
    Combine all ingredients in blender.
    Mix well.
    Pour batter into deep dish pie plate or quiche dish.
    Bake in preheated oven at 400\u00b0 for 30 minutes or until custard sets.
