Curried Couscous Pilaf - cooking recipe
Ingredients

2 Tbsp. butter
1 small onion, chopped
1 clove garlic, minced
1 c. mushrooms, sliced
1/2 red bell pepper, chopped
1/2 c. fresh or frozen peas
1/2 c. green onions, chopped
1 1/2 c. water or broth
3/4 tsp. salt
2 tsp. curry powder
1 c. couscous
Preparation

In a covered saucepan on low heat, saute onion and garlic in butter until soft.
Add mushrooms, red bell pepper, peas and green onions and cook until nearly tender.
Add water or broth, salt and curry powder and bring to a boil.
Add couscous; stir.
Reduce heat; cover and cook for 3 to 5 minutes or until liquid is absorbed.
Makes 8 (1/2 cup) servings.
