Ingredients

2 c. crumbled cake, ladyfingers, etc.
1 Tbsp. sherry
1/2 c. jam (raspberry, strawberry or apricot)
1 can pears, peaches or fruit cocktail
1 large pkg. vanilla pudding mix, cooked or instant
1 tsp. rum extract
whipped cream
raspberries, chopped nuts or shaved chocolate for garnish
1 Tbsp. coconut
Preparation

Crumble cake in bottom of pretty glass bowl.
Sprinkle with sherry.
Spread jam over cake.
Drain fruit; arrange over jam. Prepare pudding.
Flavor with rum.
Pour over fruit.
Sprinkle with coconut.
When pudding is set, add layer of whipped cream. Add garnish with a pretty fruit like raspberries.
