Country Fried Chicken - cooking recipe

Ingredients
    1 1/2 c. flour
    1 1/2 tsp. salt
    1/2 tsp. pepper
    2 to 3 lb. chicken, cut up
    1 c. buttermilk
    4 Tbsp. lard
    4 Tbsp. butter or margarine
Preparation
    Put flour into a flat dish and mix in salt and pepper. Dip each piece of chicken into buttermilk, then dredge in flour.
    Set aside.
    Put lard and butter into a large skillet.
    Heat until hot. Very quickly, put in pieces of chicken.
    Brown on both sides, then reduce heat and cover with a tight lid.
    Fry about 20 minutes or until tender.
