Spinach-Artichoke Salad - cooking recipe

Ingredients
    1 lb. fresh spinach
    1/2 lb. crisp lettuce
    6 whole green onions
    1 lb. fresh mushrooms
    1 can ripe olives (optional)
    4 Tbsp. oil (lite olive)
    2 Tbsp. vinegar (apple cider)
    1 (15 oz.) can artichoke hearts, drained
    croutons
    Parmesan cheese to taste
Preparation
    Tear spinach and lettuce in bite sized pieces; slice onions and mushrooms.
    Combine.
    Toss with oil and vinegar.
    Sprinkle with Parmesan cheese.
    Add salt and pepper to taste.
    Add artichoke hearts and croutons.
    Yields 8 generous servings.
    (My favorite for 8-at-8 dinners.)
