Crab Cakes With Aged Cheddar - cooking recipe
Ingredients

1 lb. cooked dungeness crab meat, cleaned and flaked
1 Tbsp. Dijon mustard
3/4 c. sliced green onion
1/2 c. good quality mayonnaise
2 c. fresh bread crumbs
large pinch of cayenne pepper
1 egg, beaten
2 Tbsp. peanut or vegetable oil
1 c. grated Cheddar cheese
Preparation

Preheat broiler.
In a bowl, combine crab, mustard, cayenne, green onion, egg and mayonnaise. Stir to mix well.
Divide mixture into 8 equal portions. Shape each into a ball, then flatten into a 1/2-inch thick patty. Set aside.
