No-Cholesterol Orange Cake - cooking recipe

1 1/2 c. sifted flour
1 c. sugar
2 tsp. baking powder
1/4 tsp. salt
1/2 c. Mazola corn oil
2 tsp. grated orange peel (rind)
1/2 c. orange juice
4 egg whites (at room temperature)
Preparation

Grease and flour bottom of an 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan.
In a large mixing bowl, stir together flour, sugar, baking powder and salt.
Add corn oil, orange rind and juice.
With mixer at medium speed, beat until smooth.
In a small bowl with mixer at high speed, beat egg whites until stiff peaks form. Fold egg whites into flour mixture.
Turn into prepared pan. Bake at 350\u00b0 for 50 minutes or until cake springs back when lightly touched. Cool 10 minutes in pan.
Remove from pan. Cool completely on wire rack.
