Extra Good Potato Soup - cooking recipe
Ingredients

3 potatoes, peeled
3 slices onion
2 Tbsp. all-purpose flour
1/4 tsp. celery salt
1 tsp. chopped parsley
1 qt. milk
3 Tbsp. butter
1 1/2 tsp. salt
1/8 tsp. pepper
few grains cayenne pepper
Preparation

Cook the potatoes in salted water.
When soft, rub through strainer.
There should be 2 1/2 cups.
Scald the milk with onion, remove the onion and slowly whisk the milk into the potatoes. Melt half of the butter and add the flour, salt, celery salt, pepper and cayenne.
Stir until well mixed, then stir into the hot soup.
Boil for 1 minute, strain and add the remaining butter. Sprinkle with parsley.
Serves 4 to 6.
