Creole Gumbo(Pressure Cooker Directions) - cooking recipe
Ingredients

3 Tbsp. ham drippings (fat)
2 1/2 c. cut okra
1 large chopped onion
2 garlic cloves, chopped
1 medium green pepper, chopped
1 (8 oz.) can tomato sauce
1/2 c. crab meat
1 tsp. thyme
2 Tbsp. flour
1/2 pt. oysters with liquid
4 c. water
3 Tbsp. diced ham
2 medium bay leaves
1 tsp. parsley, finely chopped
1 tsp. salt
dash of black pepper
1/2 tsp. cayenne pepper
Preparation
-
Heat your pressure cooker.
Brown okra lightly in your ham fat.
Add the remaining ingredients and mix well.
Cover and allow steam to escape releasing all your air from cooker.
Add weight. Cook 15 minutes with stem at cook position.
Turn off and allow stem to go back down, open when safe.
