Old-Fashioned Rice Pudding - cooking recipe

Ingredients
    1 3/4 c. water
    1/2 c. long grain rice
    2 c. milk
    2 large eggs, beaten
    1/2 c. sugar
    1 tsp. vanilla
    1/2 c. raisins (optional)
    cinnamon
Preparation
    Bring water to boil.
    Stir in rice; cover and simmer until all water is absorbed.
    Add milk and boil gently, stirring occasionally until mixture thickens slightly, about 5 minutes. Combine eggs, sugar and vanilla in bowl.
    Gradually stir in rice mixture.
    Add raisins, if desired, then pour into a greased 1 1/2-quart casserole.
    Sprinkle cinnamon over the top.
    Place casserole in pan containing about 1-inch of hot water.
    Set both in oven preheated to 350\u00b0.
    Bake, uncovered, for 45 to 50 minutes. Serve warm or cold.
    Store, covered, in refrigerator.
