Stuffed Zucchini Boats - cooking recipe

Ingredients
    4 small zucchini (6 to 8-inches long)
    1/2 to 1 c. Mozzarella cheese, shredded
    salt and pepper
Preparation
    Wash zucchini.
    Cut in half lengthwise.
    Scoop out seeds. Fill with shredded Mozzarella cheese, salt and pepper to taste. Broil until cheese is bubbly and slightly browned.
    Serve hot.
