Vegetarian Split Pea Soup - cooking recipe

Ingredients
    2 c. split peas, washed
    2 qt. water
    1 c. sliced celery
    1/2 c. diced onion
    1 c. chopped carrots
    1 c. diced potato
    1 clove garlic, minced
    1 bay leaf
    1/4 c. snipped parsley
    1/2 tsp. crushed oregano
    1/2 tsp. crushed basil
    1 tsp. dried Italian seasoning
    1/2 tsp. salt
    pinch of cayenne
Preparation
    Combine all ingredients in a
    Dutch oven. Bring to a boil. Reduce heat, cover and simmer 1 hour or until split peas are cooked through.
    Remove bay leaf before serving.
    Makes 10 (1-cup) servings.
