Seafood Gumbo(Use A Very Large Pot.) - cooking recipe

Ingredients
    3 c. flour
    3 c. oil
    2 gal. water
    8 onions, chopped
    4 bell peppers, chopped
    8 ribs celery, chopped
    3 Tbsp. minced garlic
    2 bunches green onions, chopped
    2 Tbsp. parsley
    1 Tbsp. liquid crab boil
    1 can Ro-Tel tomatoes
    2 small pkg. frozen okra
    10 lb. shrimp
    2 lb. crab meat
    1 qt. oysters
    salt to taste
    red pepper to taste
Preparation
    Make a very dark roux with flour and oil, stirring all the time.
    Add onions, garlic, bell peppers and celery.
    Stir well. When wilted, add tomatoes and water.
    Salt and pepper.
    Let come to a boil, then turn to medium heat and add okra and crab boil.
    Let simmer 45 minutes.
    Add shrimp, crab meat and oysters.
    Simmer slowly for 20 minutes.
    Turn off heat.
    Add green onions and parsley.
    Serve over rice.
