Gator Ollie'S Black Bean Soup - cooking recipe

Ingredients
    2 c. black beans
    3 qt. water
    2 sticks chopped celery
    2 large onions, chopped
    1 stick butter
    1 bay leaf
    1 1/4 Tbsp. flour
    1/4 c. chopped fresh parsley
    1 tsp. fried meat seasoning or ham hock
    1 1/2 scallions, finely chopped
    1/2 c. sweet red wine
    salt to taste
    1/8 tsp. cayenne pepper
    1/4 tsp. black pepper
Preparation
    Soak beans overnight; rinse.
    Add water to cover and cook over low heat for 1 1/2 hours.
    In soup kettle, saute celery and onions with butter until tender.
    Blend in flour and parsley and cook 1 minute.
    Slowly stir in beans and liquid.
    Add fried meat grease, scallions, bay leaf, salt and pepper.
    Simmer 4 hours on low heat; remove bay leaf and any bones.
    Puree beans in blender.
    Add pureed beans back to broth with wine; bring to boil.
    Remove from heat and serve.
