Creole Jambalaya - cooking recipe
Ingredients

1 1/2 lb. whole shrimp
1/2 c. chopped onion
1 clove garlic, minced
1 (1 lb.) can tomatoes, drained (reserve liquid)
2 sprigs parsley
1 tsp. salt
2 Tbsp. butter
1 Tbsp. chopped green pepper
1 lb. smoked sausage
1 c. rice
1 bay leaf
2 tsp. chopped celery
1/8 tsp. red pepper
Preparation

Peel, devein and wash shrimp.
Melt butter in a 2 1/2-quart saucepan over medium heat.
Add onion and green pepper.
Saute until soft, about 6 minutes.
Stir in garlic and smoked sausage; saute 5 minutes.
Chop drained tomatoes; stir in and cook 2 minutes.
With a fork, stir in rice to blend.
Add shrimp and seasonings.
Pour tomato liquid over all.
Bring to a boil
Do not stir.
Cover and cook for 45 minutes over low heat.
Serves 4.
