Blueberry Muffins - cooking recipe
Ingredients

2 1/3 c. all-purpose flour
2 Tbsp. sugar
1 Tbsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. salt
1 c. skim milk
1/4 c. reduced calorie margarine, melted
1 egg, beaten
1 tsp. vanilla extract
1 1/2 c. fresh or frozen blueberries, thawed and drained
vegetable cooking spray
Preparation

Combine first 5 ingredients in a large bowl.
Make a well in center of mixture.
Combine milk, margarine, egg and vanilla.
Add to dry ingredients, stirring just until moistened.
Fold in blueberries.
Spoon batter into muffin pans coated with cooking spray, filling two-thirds full.
Bake at 400\u00b0 for 20 to 25 minutes or until golden brown.
Yield:
16 muffins (about 95 calories each).
