Mexi Turkey D'Light - cooking recipe
Ingredients

1 lb. ground turkey
1 (1 1/4 oz.) pkg. taco seasoning
1/2 c. water
1 (15 oz.) can kidney beans, drained
1 (16 oz.) can Mexican tomatoes
1 (6 1/2 oz.) pkg. yellow corn bread mix
1/4 onion, chopped
1/4 green pepper, chopped
1/4 c. jalapeno pepper, chopped
1/2 c. reduced calorie cheese, grated
Preparation

Cook turkey about 5 minutes or until no longer pink.
Add taco seasonings and water and simmer for 10 minutes.
Place kidney beans in an 8 x 2-inch casserole.
Layer cooked turkey on top of beans, then tomatoes.
In a small bowl, mix corn bread mix, adding water according to package directions, with onion, cheese and peppers. Spread mixture on top of turkey and beans.
Bake at 350\u00b0 for 35 to 40 minutes or until corn bread mix is golden brown.
Makes 6 to 8 servings.
