Pasta With Vodka Tomato Sauce - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 small chopped onion
    2 garlic cloves, minced
    1 Tbsp. dried, crumbled Italian seasoning
    1 (16 oz.) can plum tomatoes, chopped (juices reserved)
    3 oz. chopped, sliced Prosciutto
    1/2 c. vodka
    3/4 c. whipping cream
    1 c. grated Parmesan cheese
    8 oz. freshly cooked rigatoni or other tubular pasta
Preparation
    Heat oil in large, heavy skillet over medium-high heat.
    Add onion, garlic and Italian seasonings and saute until onion is translucent, about 4 minutes.
    Add tomatoes, reserved juices and Prosciutto and simmer 10 minutes, stirring occasionally.
    Add vodka and simmer 5 minutes.
    Add cream and 1/2 cup Parmesan cheese.
    Simmer until sauce thickens slightly, about 4 minutes. Add pasta and stir until sauce coats pasta.
    Season with salt and pepper.
    Serve, passing remaining 1/2 cup of Parmesan cheese separately.
