Classic Ratatouille - cooking recipe

Ingredients
    1/3 c. olive oil
    2 large onions, sliced
    3 garlic cloves, chopped
    2 small eggplants, cubed
    4 small zucchini, sliced
    3 green peppers, cut in strips
    2 1/2 c. plum tomatoes
    1 tsp. dry basil
    1/2 c. chopped parsley
    1 1/2 tsp. salt
    pepper to taste
Preparation
    Combine all ingredients.
    Simmer in covered pot for 1 hour. Uncover and cook until thick.
