Corned Beef Stuffed Potatoes - cooking recipe
Ingredients

4 large baking potatoes
1 1/2 c. minced, cooked corned beef
1/4 c. butter
salt and pepper to taste
1/8 c. minced parsley
4 eggs
Preparation

Bake potatoes at 400\u00b0 for 1 hour or until done.
Cut slice off top of each potato.
Scoop out centers.
Leave 1/2-inch potato around walls.
Mash potatoes.
Stir in corned beef and butter. Add salt and pepper.
Divide mixture among potatoes; reheat.
