Chicken With Potato Stuffing - cooking recipe

Ingredients
    1 large onion, chopped
    1 c. chopped celery
    1/2 c. oleo
    4 c. mashed potatoes (can use instant)
    2 eggs, slightly beaten
    1 c. packaged herb-seasoned bread stuffing
    1/2 c. chopped parsley or 1 Tbsp. dried flakes
    1 tsp. salt
    1/4 tsp. pepper
    4 chicken breasts, split or 6 thighs
    1/2 tsp. salt
    1/4 c. melted oleo
    dash of pepper
    1/4 tsp. paprika
Preparation
    Saute onion and celery in oleo until tender.
    Add mashed potatoes.
    Stir in eggs, stuffing, parsley, salt and pepper.
    Turn into a greased shallow baking dish.
    Arrange chicken on top. Brush chicken with melted oleo; sprinkle with salt, pepper and paprika.
    Bake at 375\u00b0 about 1 hour or until chicken is tender and browned.
