Chantilly Mashed Potatoes - cooking recipe

Ingredients
    6 Russet potatoes (3 lb.)
    1/4 c. butter, softened
    3/4 c. milk, warmed
    3/4 c. chilled heavy cream
    1 c. grated Swiss cheese
    3 Tbsp. Parmesan cheese
Preparation
    Preheat oven to 400\u00b0.
    Wash potatoes and prick several times with a fork. Bake 45 minutes to 1 hour.
    Halve lengthwise and cool until can be handled. Scoop out potatoes into bowl. Spread in a shallow 3-quart gratin dish.
    Increase oven temperature to 500\u00b0. Whip the cream to soft peaks and fold in Swiss cheese. Spread cream mixture over potatoes and sprinkle with Parmesan.
    Bake approximately 10 minutes until top is browned.
    Serves 6.
